Flac conversion - tagging tracks? Newbie Questions...

This is my first time using a converter. I've just downloaded the FLAC files of a boxed set. I want to convert them into LAME MP3 files for iTunes? My understanding is that if I use the "transparent" option for MP# encoding I'll get reasonably high quality. Is that accurate? Also, will the new files include the track name, artist, album, etc? These are the tags, right? If they do not, can I acquire the tags from MusicBrainz? How is that done or can it be set to automatically happen?
