I can say right away that MP3's made with Max will be 100% gapless-compatible with iTunes. Max uses LAME as MP3 encoder and iTunes uses the LAME-gapless method to play gapless. I use Media Rage . It's not free but for me it's worth it. It supports the 'Composer' field. Regarding iTunes. Is it possible to put the encoder in the encoder tag for AAC files? Now it only mentions 'Max 0.6' but not the actual encoder. iTunes uses something like 'iTunes v6.04, QuickTime 7.0.1'.
