So I notice in the release notes the latest version of Max supports FLAC files AND FLAC cue sheets.

Well, happily, no information on how to use a cue file is present in neither the help documentation NOR within the interface. Also, no one is talking about this here either.

So please, can someone post a step by step guide for how to convert a FLAC to MP3 using Max, and using a cue sheet to split the huge single FLAC into multiple MP3s?

Thanks!

Assuming you have a CUE file that is properly formatted, the FLAC file it points to exists, etc., all you should have to do is select Open... from the File menu and then select the cue file. You should see a window similar to the disc window open up. Select the tracks you would like to split and then click convert.
