iTunes stores its album art in a proprietary .itc format, in files separate from the audio tracks themselves. I've had limited success extracting the artwork from them- the itc format isn't terribly difficult to decipher, but the problem is one must know the tracks' iTunes library ID and track ID to determine which itc file to open. So unless the tracks are added via the iTunes browser (which knows these IDs since it uses iTunes' own XML file) there is no good way to find the itc resources.
