Should I be able to play a multichannel WavPack (.wv)?

I'm using Play 0.3 (1071) to play back a 6-channel 24-bit / 96kHz WavPack file through the built-in digital output on my Mac Pro.

It works, but it's only sending a stereo L-R signal. Is there a way to get multichannel audio across a TOSlink cable to my receiver?

Would this require some type of encoding (DTS, Dolby, etc.)?

That's 2 channels more than I thought would work :)

I'm no expert, but I think you're correct when you say that some sort of encoding would be required, at least with the standard digital output. If you had a multichannel sound card it would likely work as is.
